Shakshuka:
Shakshuka is a delicious Middle Eastern and North African dish made with poached eggs in a rich, spiced tomato sauce. Perfect for breakfast, brunch, or even dinner!
Ingredients:
- 2 tbsp olive oil
- 1 onion, finely chopped
- 1 red bell pepper, diced
- 2 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp paprika
- ½ tsp chili powder (adjust to taste)
- 1 can (400g) crushed tomatoes
- 1 tbsp tomato paste (optional, for extra richness)
- Salt & pepper to taste
- 4–6 eggs
- ¼ cup crumbled feta cheese (optional)
- Fresh parsley or cilantro, chopped (for garnish)
- Bread or pita, for serving
Instructions:
1. Cook the Aromatics:
- Heat olive oil in a large skillet or pan over medium heat.
- Sauté onion and bell pepper for 5 minutes until softened.
- Add garlic, cumin, paprika, and chili powder, stirring for 30 seconds until fragrant.
2. Simmer the Sauce:
- Pour in crushed tomatoes and stir in tomato paste.
- Season with salt and pepper, then let simmer for 10 minutes, stirring occasionally, until thickened.
3. Poach the Eggs:
- Make small wells in the sauce and gently crack the eggs into them.
- Cover the pan and simmer for 5–7 minutes, or until egg whites are set but yolks remain runny (cook longer for firmer yolks).
4. Serve & Garnish:
- Sprinkle with crumbled feta and fresh parsley or cilantro.
- Serve hot with warm bread or pita for dipping.
Tips & suggestions:
- For extra spice, add red pepper flakes or diced jalapeños.
- Make it heartier by adding chickpeas or sautéed spinach.
- For a smoky flavor, use smoked paprika instead of regular paprika.
