Poached Eggs in Spicy Tomato Sauce.

Shakshuka:

Shakshuka is a delicious Middle Eastern and North African dish made with poached eggs in a rich, spiced tomato sauce. Perfect for breakfast, brunch, or even dinner!

Ingredients:

  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 1 red bell pepper, diced
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • ½ tsp chili powder (adjust to taste)
  • 1 can (400g) crushed tomatoes
  • 1 tbsp tomato paste (optional, for extra richness)
  • Salt & pepper to taste
  • 4–6 eggs
  • ¼ cup crumbled feta cheese (optional)
  • Fresh parsley or cilantro, chopped (for garnish)
  • Bread or pita, for serving

Instructions:

1. Cook the Aromatics:

  • Heat olive oil in a large skillet or pan over medium heat.
  • Sauté onion and bell pepper for 5 minutes until softened.
  • Add garlic, cumin, paprika, and chili powder, stirring for 30 seconds until fragrant.

2. Simmer the Sauce:

  • Pour in crushed tomatoes and stir in tomato paste.
  • Season with salt and pepper, then let simmer for 10 minutes, stirring occasionally, until thickened.

3. Poach the Eggs:

  • Make small wells in the sauce and gently crack the eggs into them.
  • Cover the pan and simmer for 5–7 minutes, or until egg whites are set but yolks remain runny (cook longer for firmer yolks).

4. Serve & Garnish:

  • Sprinkle with crumbled feta and fresh parsley or cilantro.
  • Serve hot with warm bread or pita for dipping.

Tips & suggestions:

  • For extra spice, add red pepper flakes or diced jalapeños.
  • Make it heartier by adding chickpeas or sautéed spinach.
  • For a smoky flavor, use smoked paprika instead of regular paprika.
