Shepherd’s Pie – A Comforting Classic!

This hearty dish layers savory meat and vegetables under a creamy mashed potato topping, making it the ultimate comfort food.

Ingredients:

For the Meat Filling:

  • 1 lb (450g) ground beef or lamb
  • 1 tbsp olive oil
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 tbsp tomato paste
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme (or rosemary)
  • ½ tsp salt
  • ½ tsp black pepper

For the Mashed Potatoes:

  • 2 lbs (900g) potatoes (peeled and cubed)
  • 4 tbsp butter
  • ½ cup milk (or heavy cream for extra creaminess)
  • ½ cup shredded cheddar cheese (optional)
  • ½ tsp salt
  • ½ tsp black pepper

Instructions:

1. Prepare the Mashed Potatoes:

  • Boil potatoes in salted water until tender (about 15 minutes).
  • Drain and mash with butter, milk, salt, and pepper until smooth.
  • Stir in cheddar cheese (if using) for extra richness.

2. Cook the Meat Filling:

  • Heat olive oil in a pan over medium heat.
  • Add chopped onion and garlic, sauté until softened.
  • Add ground beef (or lamb) and cook until browned. Drain excess fat.
  • Stir in tomato paste, Worcestershire sauce, beef broth, thyme, salt, and pepper.
  • Add mixed vegetables and simmer for 5 minutes until slightly thickened.

3. Assemble & Bake:

  • Preheat oven to 400°F (200°C).
  • Spread the meat mixture in a baking dish.
  • Top evenly with mashed potatoes, smoothing with a spoon.
  • (Optional) Use a fork to create ridges for a crispy top.
  • Bake for 20–25 minutes until golden brown.

4. Serve & Enjoy!
