Ingredients:
For the Shrimp:
- 1 lb shrimp, peeled and deveined
- 1 tbsp olive oil
- 1 tsp chili powder
- ½ tsp garlic powder
- ½ tsp cumin
- ½ tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- Juice of 1 lime
For the Slaw:
- 2 cups shredded cabbage (purple or green, or a mix)
- ¼ cup carrots, shredded
- ¼ cup cilantro, chopped
- ¼ cup Greek yogurt or mayonnaise
- 1 tbsp lime juice
- ½ tsp honey
- Salt & pepper to taste
Other Toppings:
- 1 avocado, sliced
- ½ cup cotija cheese or feta (optional)
- 1 jalapeño, thinly sliced (optional)
- 8 small corn tortillas
Instructions:
- Prepare the slaw: In a bowl, mix the cabbage, carrots, and cilantro. In a separate small bowl, whisk together the yogurt (or mayo), lime juice, honey, salt, and pepper. Pour over the slaw and toss to combine. Set aside.
- Cook the shrimp:
- In a bowl, toss the shrimp with olive oil, chili powder, garlic powder, cumin, paprika, salt, pepper, and lime juice.
- Heat a pan over medium-high heat and cook the shrimp for about 2 minutes per side until pink and slightly charred. Remove from heat.
- Warm the tortillas: Heat the tortillas in a dry skillet or directly over a flame for about 20 seconds per side.
- Assemble the tacos: Place a spoonful of slaw on each tortilla, add shrimp, slices of avocado, and any additional toppings like cheese or jalapeño.
- Serve immediately with lime wedges on the side.
Tips & suggestions:
- Choose Fresh or Frozen Shrimp: Fresh shrimp are great, but frozen shrimp work just as well. Just be sure to thaw them properly before cooking.
- Don’t Overcook the Shrimp: Shrimp cook quickly—about 2-3 minutes per side. Overcooking can make them rubbery, so keep an eye on them!
- Enhance the Flavor: A quick marinade with lime juice and spices before cooking will make your shrimp extra tasty.
- Crunchy Slaw is Key: Let the slaw sit for a few minutes after mixing to allow the flavors to meld and soften slightly.
- Warm Your Tortillas: Heating tortillas in a dry pan or directly over a flame makes them more pliable and enhances their flavor.
- Customize Your Toppings: Try adding jalapeños for heat, crumbled queso fresco for a cheesy touch, or a drizzle of spicy mayo for extra creaminess.
Enjoy your meal!
