Spaghetti Aglio e Olio

Simple pasta with garlic, olive oil, and chili flakes.

Spaghetti Aglio e Olio:

A classic Italian pasta dish, Spaghetti Aglio e Olio is quick, simple, and packed with flavor. The combination of garlic-infused olive oil and red pepper flakes creates a deliciously aromatic sauce that perfectly coats the spaghetti.

Ingredients:

  • 200g (7 oz) spaghetti
  • 3 tbsp olive oil
  • 4 cloves garlic (thinly sliced)
  • ½ tsp red pepper flakes (adjust to taste)
  • 2 tbsp fresh parsley (chopped)
  • Salt (to taste)
  • Freshly ground black pepper (to taste)
  • Grated Parmesan cheese (optional)

Instructions:

  1. Cook the Pasta: Boil spaghetti in salted water according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
  2. Sauté the Garlic: In a large skillet, heat olive oil over medium-low heat. Add garlic and sauté until golden and fragrant (about 1–2 minutes). Be careful not to burn it.
  3. Add Chili Flakes: Stir in red pepper flakes and cook for 30 seconds.
  4. Combine with Pasta: Add drained spaghetti to the skillet and toss well. If needed, add some reserved pasta water to loosen the sauce.
  5. Season & Garnish: Stir in chopped parsley, season with salt and black pepper, and toss again.
  6. Serve & Enjoy: Optionally, sprinkle with grated Parmesan cheese and serve immediately.

Tips for the Best Spaghetti Aglio e Olio:

  • Use high-quality olive oil for the best flavor.
  • Toast the garlic gently—burnt garlic can make the dish bitter.
  • Add a protein like shrimp or grilled chicken for a heartier meal.
  • For extra richness, finish with a drizzle of extra virgin olive oil and a squeeze of lemon juice.
  • Enjoy this comforting and flavorful dish with a side of crusty bread or a fresh green salad!
