Ingredients:

For the Roasted Red Pepper Sauce:

  • 2 large red bell peppers
  • 2 tbsp olive oil
  • ½ small onion, chopped
  • 3 cloves garlic, minced
  • ½ tsp red pepper flakes (optional, for spice)
  • ½ cup vegetable broth (or pasta water)
  • ½ cup heavy cream or coconut milk (for a vegan option)

Instructions:

  1. Roast the Red Peppers:
    • Preheat oven to 450°F (230°C).
    • Place whole red bell peppers on a baking sheet and drizzle with olive oil.
    • Roast for 20-25 minutes, turning occasionally, until the skin is charred.
    • Transfer to a bowl, cover with plastic wrap, and let steam for 10 minutes. Peel off the skin, remove seeds, and set aside.
  2. Make the Sauce:
    • Heat 1 tbsp olive oil in a pan over medium heat.
    • Sauté onion until soft, then add garlic and red pepper flakes. Cook for 1 more minute.
    • In a blender, combine roasted red peppers, sautéed onion mixture, vegetable broth, oregano, salt, and pepper. Blend until smooth.
    • Pour the sauce back into the pan, stir in heavy cream (or coconut milk), and simmer for 5 minutes. Add Parmesan if using.
  3. Cook the Pasta:
    • Bring a large pot of salted water to a boil. Cook spaghetti according to package instructions until al dente. Reserve ½ cup pasta water and drain.
  4. Toss & Serve:
    • Add cooked pasta to the sauce, tossing to coat. Add reserved pasta water if needed for a silkier texture.
    • Garnish with fresh basil or parsley and serve warm!
