Stuffed Zucchini Boats

Zucchini halves filled with seasoned ground turkey and cheese.

Stuffed Zucchini Boats:

A low-carb and flavorful meal, these zucchini boats are packed with lean protein, savory marinara, and melty cheese!

Ingredients:

  • 4 medium zucchinis
  • 1 lb (450 g) ground turkey (or ground chicken)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp cumin (optional)
  • Salt and pepper, to taste
  • 1 cup marinara sauce (or tomato sauce)
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 tbsp olive oil (for sautéing)
  • Fresh parsley or basil for garnish (optional)

Instructions:

  1. Prepare the zucchini:
    • Preheat your oven to 375°F (190°C).
    • Cut the zucchinis in half lengthwise and scoop out the center using a spoon to create boats, leaving a small border around the edges. Be careful not to scoop too deeply—leave some flesh for texture.
    • Place the hollowed zucchini halves on a baking sheet or in a baking dish, and lightly drizzle with olive oil. Season with a pinch of salt and pepper.
  2. Cook the ground turkey:
    • In a large skillet, heat 1 tbsp of olive oil over medium heat. Add the chopped onion and garlic, and sauté for about 3-4 minutes until softened.
    • Add the ground turkey to the skillet, breaking it up with a spoon. Cook for 5-7 minutes, until the turkey is browned and cooked through.
    • Stir in the oregano, basil, cumin (if using), salt, and pepper. Pour in the marinara sauce and cook for another 2-3 minutes to allow the flavors to combine. Remove from heat.
  3. Stuff the zucchini boats:
    • Spoon the seasoned ground turkey mixture into the hollowed zucchini halves, packing the filling slightly to ensure they’re well-stuffed.
  4. Top with cheese:
    • Sprinkle the shredded mozzarella and grated Parmesan cheese over the stuffed zucchini boats.
  5. Bake:
    • Bake the stuffed zucchini boats in the preheated oven for 20-25 minutes, or until the zucchini is tender and the cheese is melted and bubbly.
  6. Serve:
    • Remove the zucchini boats from the oven and garnish with fresh parsley or basil, if desired.
    • Serve as a main dish with a side of salad or roasted vegetables.
