Sweet Potato & Black Bean Burrito

A hearty, satisfying burrito that combines creamy mashed sweet potatoes, protein-packed black beans, and scrambled eggs. Perfect for a nourishing breakfast or lunch!

Ingredients:

  • 1 medium sweet potato, peeled and cubed
  • 1/2 cup black beans, drained and rinsed
  • 2 large eggs
  • 1 tbsp olive oil
  • 1/2 tsp cumin
  • 1/4 tsp chili powder (optional, for some heat)
  • Salt and pepper, to taste
  • 1 whole-wheat tortilla (or any large tortilla of your choice)
  • 1/4 cup shredded cheese (optional, for extra richness)
  • Fresh cilantro (optional, for garnish)
  • Salsa or hot sauce (optional, for serving)

Instructions:

  1. Cook the Sweet Potato:
    • In a medium pot, bring water to a boil and add the cubed sweet potato. Cook for 10-12 minutes, or until tender and easily pierced with a fork. Drain and mash the sweet potato with a fork or potato masher. Season with salt, pepper, cumin, and chili powder.
  2. Scramble the Eggs:
    • While the sweet potato is cooking, heat the olive oil in a skillet over medium heat. Crack the eggs into the skillet and scramble until cooked through, about 2-3 minutes. Season with a pinch of salt and pepper.
  3. Warm the Beans:
    • In the same skillet, add the black beans and heat through for 2-3 minutes, just enough to warm them up.
  4. Assemble the Burrito:
    • Warm the tortilla in a separate pan or microwave to make it more pliable.
    • In the center of the tortilla, spread a generous amount of mashed sweet potato, then add scrambled eggs, black beans, and a sprinkle of cheese (if using).
  5. Wrap and Serve:
    • Fold in the sides of the tortilla and roll it up tightly into a burrito.
    • Optionally, garnish with fresh cilantro and serve with salsa or hot sauce on the side.
