These vibrant, vegetarian tacos feature creamy mashed sweet potatoes and hearty black beans, all wrapped in soft tortillas.
Ingredients
For the Filling:
- 2 medium sweet potatoes, peeled and diced
- 1 can (400g) black beans, drained and rinsed
- 1 tablespoon olive oil
- 1 teaspoon cumin
- ½ teaspoon smoked paprika
- ½ teaspoon chili powder (optional, for heat)
- Salt and black pepper to taste
- 1 tablespoon lime juice
For the Tacos:
- 8 small corn or flour tortillas
- ½ cup red onion, finely chopped
- ½ cup fresh cilantro, chopped
- 1 avocado, sliced
- 1 cup shredded lettuce or cabbage (optional)
- 1 tablespoon hot sauce or salsa (optional, for extra flavor)
- Lime wedges for serving
Instructions
- Prepare the Sweet Potatoes:
- Boil the diced sweet potatoes in a pot of water for about 10-12 minutes, or until soft and fork-tender.
- Drain the water and mash the sweet potatoes with a fork or potato masher.
- Stir in olive oil, cumin, smoked paprika, chili powder, salt, black pepper, and lime juice. Mix until well combined.
- Prepare the Black Beans:
- In a small pan, heat olive oil over medium heat.
- Add the black beans and cook for about 3-5 minutes, stirring occasionally.
- Season with salt, pepper, and a little cumin to taste.
- Warm the Tortillas:
- Warm the tortillas in a skillet over medium heat for about 30 seconds per side or until soft and slightly toasted.
- Assemble the Tacos:
- Spread a spoonful of the mashed sweet potato on each tortilla.
- Top with black beans, chopped red onion, cilantro, avocado slices, and shredded lettuce (optional).
- Drizzle with hot sauce or salsa if desired.
