Sweet Potato & Black Bean Tacos:

These vibrant, vegetarian tacos feature creamy mashed sweet potatoes and hearty black beans, all wrapped in soft tortillas.

Ingredients

For the Filling:

  • 2 medium sweet potatoes, peeled and diced
  • 1 can (400g) black beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon chili powder (optional, for heat)
  • Salt and black pepper to taste
  • 1 tablespoon lime juice

For the Tacos:

  • 8 small corn or flour tortillas
  • ½ cup red onion, finely chopped
  • ½ cup fresh cilantro, chopped
  • 1 avocado, sliced
  • 1 cup shredded lettuce or cabbage (optional)
  • 1 tablespoon hot sauce or salsa (optional, for extra flavor)
  • Lime wedges for serving

Instructions

  1. Prepare the Sweet Potatoes:
    • Boil the diced sweet potatoes in a pot of water for about 10-12 minutes, or until soft and fork-tender.
    • Drain the water and mash the sweet potatoes with a fork or potato masher.
    • Stir in olive oil, cumin, smoked paprika, chili powder, salt, black pepper, and lime juice. Mix until well combined.
  2. Prepare the Black Beans:
    • In a small pan, heat olive oil over medium heat.
    • Add the black beans and cook for about 3-5 minutes, stirring occasionally.
    • Season with salt, pepper, and a little cumin to taste.
  3. Warm the Tortillas:
    • Warm the tortillas in a skillet over medium heat for about 30 seconds per side or until soft and slightly toasted.
  4. Assemble the Tacos:
    • Spread a spoonful of the mashed sweet potato on each tortilla.
    • Top with black beans, chopped red onion, cilantro, avocado slices, and shredded lettuce (optional).
    • Drizzle with hot sauce or salsa if desired.
  5. Serve & Enjoy:
    • Serve the tacos with lime wedges on the side for extra zest.
