Teriyaki Beef Bowl

Teriyaki Beef Bowl:

A savory and slightly sweet Teriyaki Beef Bowl that combines tender marinated beef with crisp stir-fried vegetables, all served over a warm bed of rice.

Ingredients:

1- For the beef and marinade:

  • 1 lb (450 g) flank steak or sirloin, thinly sliced against the grain
  • ¼ cup soy sauce (or tamari for gluten-free)
  • 2 tbsp honey or brown sugar
  • 2 tbsp rice vinegar
  • 2 tbsp sesame oil
  • 1 tbsp grated ginger
  • 2 cloves garlic, minced
  • 1 tbsp cornstarch (optional, for a thicker sauce)

2- For the vegetables:

  • 1 bell pepper, sliced
  • 1 medium zucchini, sliced
  • 1 small carrot, julienned or sliced thinly
  • 1 tbsp vegetable oil

3- For the bowl:

  • 2 cups cooked rice (white, brown, or jasmine rice)
  • 1 tsp sesame seeds (optional, for garnish)
  • 2 green onions, chopped (optional, for garnish)
  • 1 tsp sesame oil (optional, for drizzling)

Instructions:

  1. Marinate the beef:
    • In a bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, grated ginger, and minced garlic.
    • Add the thinly sliced beef to the marinade and toss to coat. Let it marinate for at least 15-20 minutes, or up to 1 hour in the refrigerator for more flavor.
  2. Prepare the vegetables:
    • Heat 1 tbsp of vegetable oil in a large skillet or wok over medium-high heat.
    • Add the bell pepper, zucchini, and carrot. Stir-fry for about 4-5 minutes, until the vegetables are tender-crisp. Remove from the skillet and set aside.
  3. Cook the beef:
    • In the same skillet, add the marinated beef along with the marinade (you can add a little more soy sauce if needed). Cook the beef over medium-high heat for about 4-6 minutes, stirring occasionally, until the beef is browned and cooked through. If you prefer a thicker sauce, mix 1 tbsp cornstarch with 1 tbsp water and stir it into the sauce during the last 2 minutes of cooking.
  4. Assemble the bowls:
    • Divide the cooked rice into bowls. Top with the cooked beef and sauce, followed by the stir-fried vegetables.
    • Drizzle with a bit of sesame oil (optional) and garnish with sesame seeds and chopped green onions.
  5. Serve:
    • Serve the Teriyaki Beef Bowl warm, and enjoy a satisfying meal full of flavor and texture!
