Tuna & Avocado Toast:

This Tuna & Avocado Toast is a protein-packed, nutritious meal that’s perfect for breakfast, lunch, or even a quick snack. It’s full of healthy fats and fiber from the avocado and whole-grain bread, with the tuna providing a great source of protein!

Ingredients:

  • 2 slices whole-grain bread (or your choice of bread)
  • 1 ripe avocado
  • 1 can tuna in water or olive oil, drained and flaked
  • 1 tbsp mayonnaise or Greek yogurt (optional, for creaminess)
  • 1 tsp lemon juice (optional, for brightness)
  • Salt and pepper, to taste
  • Red pepper flakes or hot sauce (optional, for heat)
  • Fresh herbs (such as parsley or chives) for garnish (optional)

Instructions:

  1. Toast the Bread:
    • Toast the slices of whole-grain bread until golden brown and crispy.
  2. Mash the Avocado:
    • In a bowl, mash the avocado with a fork until smooth. If you like a bit of texture, leave it slightly chunky.
    • Add lemon juice, salt, and pepper to taste. You can also add a pinch of red pepper flakes or hot sauce for some extra kick.
  3. Prepare the Tuna:
    • In a separate bowl, mix the drained tuna with mayonnaise or Greek yogurt if using, and season with a little salt and pepper.
  4. Assemble the Toast:
    • Spread the mashed avocado evenly on each slice of toasted bread.
    • Top with the tuna mixture, spreading it out to cover the avocado.
