Veggie Fried Rice:

A quick and flavorful stir-fry with eggs, colorful vegetables, and seasoned rice—perfect for using up leftover rice!

Ingredients

  • 2 cups cooked rice (preferably day-old rice for better texture)
  • 2 tablespoons vegetable oil
  • 1 small onion, diced
  • 1 small carrot, diced
  • ½ cup peas (fresh or frozen)
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 2 eggs, lightly beaten
  • 2 tablespoons soy sauce (low-sodium if preferred)
  • 1 tablespoon sesame oil
  • 1 teaspoon rice vinegar (optional, for extra tang)
  • 2 green onions, chopped (for garnish)
  • ½ teaspoon sesame seeds (optional, for garnish)

Instructions

  1. Prepare the Rice:
    • If you don’t have leftover rice, cook the rice and let it cool slightly (this helps prevent it from becoming mushy).
  2. Cook the Vegetables:
    • Heat vegetable oil in a large pan or wok over medium-high heat.
    • Add the onion, carrot, peas, and red bell pepper. Stir-fry for about 5-7 minutes until the vegetables are tender and slightly caramelized.
    • Add the garlic and stir-fry for another 30 seconds until fragrant.
  3. Scramble the Eggs:
    • Push the vegetables to one side of the pan.
    • Add the beaten eggs to the empty side and scramble them until fully cooked, then mix them with the vegetables.
  4. Fry the Rice:
    • Add the cooked rice to the pan, breaking up any clumps.
    • Drizzle soy sauce, sesame oil, and rice vinegar (if using) over the rice. Stir to combine everything evenly.
    • Stir-fry for another 3-5 minutes until everything is heated through and the rice begins to slightly crisp at the edges.
  5. Serve & Garnish:
    • Garnish with green onions and sesame seeds (if using).
    • Serve hot as a standalone dish or alongside your favorite protein.

Tips & Variations :

  • Add Protein: For extra protein, consider adding grilled chicken, tofu, or shrimp to the fried rice.
  • Customize Veggies: Feel free to swap the veggies with your favorites like broccoli, zucchini, or corn.
  • Boost Flavor: A dash of chili flakes or sriracha can give it a spicy kick!
