A quick and flavorful stir-fry with eggs, colorful vegetables, and seasoned rice—perfect for using up leftover rice!
Ingredients
- 2 cups cooked rice (preferably day-old rice for better texture)
- 2 tablespoons vegetable oil
- 1 small onion, diced
- 1 small carrot, diced
- ½ cup peas (fresh or frozen)
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 2 eggs, lightly beaten
- 2 tablespoons soy sauce (low-sodium if preferred)
- 1 tablespoon sesame oil
- 1 teaspoon rice vinegar (optional, for extra tang)
- 2 green onions, chopped (for garnish)
- ½ teaspoon sesame seeds (optional, for garnish)
Instructions
- Prepare the Rice:
- If you don’t have leftover rice, cook the rice and let it cool slightly (this helps prevent it from becoming mushy).
- Cook the Vegetables:
- Heat vegetable oil in a large pan or wok over medium-high heat.
- Add the onion, carrot, peas, and red bell pepper. Stir-fry for about 5-7 minutes until the vegetables are tender and slightly caramelized.
- Add the garlic and stir-fry for another 30 seconds until fragrant.
- Scramble the Eggs:
- Push the vegetables to one side of the pan.
- Add the beaten eggs to the empty side and scramble them until fully cooked, then mix them with the vegetables.
- Fry the Rice:
- Add the cooked rice to the pan, breaking up any clumps.
- Drizzle soy sauce, sesame oil, and rice vinegar (if using) over the rice. Stir to combine everything evenly.
- Stir-fry for another 3-5 minutes until everything is heated through and the rice begins to slightly crisp at the edges.
- Serve & Garnish:
- Garnish with green onions and sesame seeds (if using).
- Serve hot as a standalone dish or alongside your favorite protein.
