Waffles with Berries:
These golden, crispy waffles topped with fresh berries make the perfect breakfast or brunch!
Ingredients:
For the Waffles:
- 1 ½ cups all-purpose flour (or whole wheat flour)
- 2 tbsp sugar
- 1 tbsp baking powder
- ½ tsp salt
- 1 cup milk (or almond milk)
- 2 large eggs
- ¼ cup melted butter (or coconut oil)
- 1 tsp vanilla extract
For the Toppings:
- ½ cup strawberries (sliced)
- ½ cup blueberries
- ½ cup raspberries
- Maple syrup, honey, or whipped cream (optional)
Instructions:
1. Prepare the Waffle Batter:
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, mix milk, eggs, melted butter, and vanilla extract.
- Gradually pour the wet ingredients into the dry ingredients, stirring until just combined (don’t overmix).
2. Cook the Waffles:
- Preheat a waffle iron and lightly grease it with butter or oil.
- Pour the batter onto the waffle plates and cook according to the waffle maker’s instructions (usually 3–5 minutes until golden brown).
3. Assemble & Serve:
- Top the warm waffles with fresh berries.
- Drizzle with maple syrup, honey, or a dollop of whipped cream.
Tips & suggestions:
- For extra crispiness, let the cooked waffles rest on a wire rack instead of stacking them.
- For a healthier version, use whole wheat flour and replace sugar with honey.
- For a chocolate twist, add chocolate chips to the batter.
